ANALISIS BIAYA PRODUKSI NASI JINGGO KUBU SARI, BANJAR GERENCENG, DENPASAR

Abstract

ABSTRACT The informal sector plays an important role in the economic life of urban and rural communities. One of the economic sectors in the culinary field that is widely involved in the community around Gajah Mada street, Denpasar, precisely in Banjar Gerenceng, is as a Jinggo rice trader. Jinggo Kubu Sari Rice is one of the many jinggo rice that is sold around Gajah Mada street,Denpasar which in fact is the forerunner of the Denpasar Jinggo community. The informal sector, especially the Jinggo rice traders, often has not calculated the total production costs incurred in processing rice. The costs taken into account in the production costs are only the raw material costs while the Direct Labor Costs and Factory Overhead Costs have not been taken into account because the two costs are difficult to determine as a result of the small cost of the product and become one with costs incurred for household needs. Limitations of knowledge and time lead to reluctance to collect actual production costs that affect later on the results of calculation of profits. Keywords: Production Costs, Jinggo Rice ABSTRAK Sektor informal memegang peranan penting dalam kehidupan perekonomian masyarakat perkotaan maupun pedesaan. Salah satu sektor perekonomian di bidang kuliner yang banyak digeluti masyarakat di seputaran Jalan Gajah Mada Denpasar tepatnya di Banjar Gerenceng adalah sebagai pedagang nasi jinggo. Nasi Jinggo Kubu Sari adalah salah satu dari sekian banyak nasi jinggo yang dijual di seputaran Jalan Gajah Mada Denpasar yang notabene merupakan cikal bakal dikenalnya nasi jinggo oleh masyarakat Denpasar. Sektor informal khususnya pedagang nasi jinggo seringkali belum menghitung keseluruhan biaya produksi yang dikeluarkan dalam mengolah nasi jinggo. Biaya yang diperhitungkan dalam biaya produksinya hanya biaya bahan bakunya saja sedangkan Biaya Tenaga Kerja Langsung dan Biaya Overhead Pabrik belum diperhitungkan karena kedua biaya tersebut sulit ditentukan sebagai akibat kandungan biayanya kecil dalam produk dan menjadi satu dengan biaya – biaya yang dikeluarkan untuk keperluan rumah tangga. Keterbatasan pengetahuan dan waktu menyebabkan keengganan untuk mengumpulkan biaya produksi yang sebenarnya yang berpengaruh nantinya pada hasil perhitungan laba .
