Abstract
ABSTRAK
Sekolah Menengah Kejuruan (SMK) Wira Harapan merupakan sekolah kejuruan di bidang
pariwisata beralamat di Jalan Raya Padang Luwih, Br. Tegal Jaya, Dalung, Kuta Utara, Badung
Bali menerapkan Kurikulum 2013 yang mendidik, melatih dan mencetak lulusan yang
kompeten di bidang perhotelan (Kantor Depan, Tata Graha, Jasa Boga dan Tata Hidangan).
Kompetensi khusus di Bidang Jasa Boga, siswa dididik dan dilatih dalam proses pengolahan
dan menyajikan berbagai jenis makanan dan minuman dan siap bekerja di industry perhotelan
sebagai seorang juru masak (cook). Sebagai calon juru masak (cook) yang professional, untuk
bisa menghasilkan makanan yang rasanya enak, menarik, sehat dan aman dimakan, sangat
diperlukan pengetahuan dan keterampilan dalam proses pengolahan makanan (metode
memasak), bahan makanan dan peralatan yang digunakan dalam pengolahan makanan. Siswa
SMK Wira Harapan khususnya jurusan Jasa Boga telah dididik dan dilatih untuk praktek
pengolahan hidangan Indonesia, Asia, dan Eropa tetapi belum mencakup praktik pengolahan
roti sebagai hidangan utama untuk sarapan. Untuk dapat mencetak lulusan yang kompeten di
bidang jasa boga, siswa SMK Wira Harapan perlu diberikan pelatihan tentang pembuatan roti
(Croissant, Danish Pastry, dan Raisin Roll). Luaran dari kegiatan ini meliputi: lulusan SMK
Wira Harapan memiliki keterampilan, pengetahuan tentang penerapan metode, bahan-bahan,
peralatan yang dipergunakan dalam proses pembuatan roti (Croissant, Danish Pastry, dan
Raisin Roll), penataan dan pengemasan produk yang menarik sehingga menambah nilai jual dari
produk roti.

ABSTRACT
Wira Harapan Vocational High School is a vocational school located on Jalan Raya Padang
Luwih, Br. Tegal Jaya, Dalung, North Kuta, Badung, Bali. It applies the 2013 Curriculum
which educates, trains and produces competent human resources in the hotel industry (Front
Office, Housekeeping, Food Production and Food and Beverages). Students are educated and
trained how to produce and serve foods and beverages, meaning that they are prepared to be
employed at the hospital industry as cooks. The cooking method, which includes the knowledge
and skill needed to process foods, and the materials as well as equipment needed highly
contribute to the production of delicious foods, healthy and safe to be consumed. The students of
Wira Harapan Vocational High School, especially those who enrolled at the Department of
Food Productions class, are educated and trained to cook Indonesian, Asian and European
foods; however, they have not been trained to produce bread as the main course for breakfast.
Therefore, it is necessary to train them to produce bread (Croissant, Danish Pastry, dan Raisin
Roll) to make them highly competent in food production. It is expected that the Wira Harapan
High School graduates will be skilled and knowledgeable of the cooking method, the materials
and equipment used in the bread production (Croissant, Danish Pastry, dan Raisin Roll), and
serving and packaging products that have more added selling value.
