Abstract

ABSTRAK
Desa Karyasari Tabanan memiliki dua kelompok tani yang mengolah nira menjadi gula aren
yaitu kelompok Tani Bunut Kuning dan Kelompok Tani Mutiara Merah. Kedua mitra masih
terkendala dalam teknik dan inovasi proses produksi gula aren karena masih produksi 100%
secara konvensional, hygiene sanitasi tempat produksi masih kurang, belum memiliki merek
dagang dan kemasan, belum paham tentang pengajuan PIRT, belum memiliki manajemen usaha
yang sistematis dan belum profesional. Pelaksanaan program IbM Gula Aren di Desa Karyasari
Kabupaten Tabanan telah berjalan sesuai rencana dan tujuan awal yaitu memberikan pelatihan
atau pendampingan atau sesuai solusi yang telah ditawarkan mengenai produksi gula aren padat
dalam bentuk gula aren mini serta gula semut atau dalam bentuk serbuk, pelatihan pengemasan
produk serta membuat design label untuk produk gula aren, memberikan pelatihan mengenai
hygiene sanitasi dan mekanisme pengajuan nomor P-IRT ke Dinas Kesehatan serta telah
melakukan uji proksimat dan uji bakteri/mikroorganisme di Laboratorium Universitas Udayana.

ABSTRACT
Karyasari Tabanan village have two groups of farmers who process liquid of palm sugar into
palm sugar product, that are Bunut Kuning and Merah Mutiara Farmer Group. Both partners
are still constrained in the techniques and innovations of the process of producing palm sugar
because it is still 100% conventional production, sanitation hygiene where the production is
still lacking, Has no trademark, packaging and information how to apply PIRT license, does not
have a systematic and professional business management. Implementation of program
community service of production Sugar Palm in Karyasari Village Tabanan Regency has been
run according to the plan and the initial goal is to provide training or mentoring for solutions
offered about the production of palm sugar in the form solid of palm sugar mini and in the form
of powder, product packaging training and designing a label for palm sugar products,
providing training on sanitation hygiene and mechanisms for submitting P-IRT numbers to the
Health Office and conducting proximate and bacterial / microorganism tests at the Udayana
University Laboratory.
